From the brilliant team at Bright Diets we would like to say a big thank you to everyone who has worked with us this in this challenging year!
We appreciate being able to help you all eat better to improve your health and lives. We know it is not easy opening up that big can of worms, which is our eating habits. But are so proud of all your efforts, no matter how small they may seem, as we belive that from little things big things grow.
We also greatly value the expertise, time and energy of all our colleagues: health professionals and disability workers who advocate and encourage our clients to come to us and help them to make those changes. We thank you too!

What's New
Zumba Christmas Party
You and your family/ friends are invited to our Zumba Christmas party on Friday 20th December at 5pm-8pm.
Bring a plate of food and /or some drinks to share as well as a few gold coins for donation to cover the room hire and to go towards the raffle prizes. Please get in touch if you would like to donate raffle prizes.
There is NO Zumba class at 11am on this day and we will be having a break over the holidays with classes returning on Friday 17th January at 11am.
If you have private health insurance or have NDIS funding, you may like to check with your fund (see information here) or Plan Manager if you can get your Zumba classes covered. Just ask me if you need a receipt for classes and I can sort you out.

End Of Year Rebates
As it is nearing the end of the year you may want to check if you have Dietitian consultation rebates from your private health insurance or perhaps your GP's EPC/ health care plan. Recipe of the Month
Festive Christmas Salad
I often cook extra foods the day before so I can use for leftovers the next day. Here it could be the extra steamed broccoli or roast pumpkin.
Serves 6-8
Ingredients
- 1 whole stem of steamed broccoli
- 1.5 cups of pumpkin cubed
- 1 packet of slithered almonds
- 2 cups lettuce
- 1 pomegranite
- extra virgin olive oil
- garlic
Dressing
- 2 tb extra virgin olive oil
- ¼ cup lemon juice
- ¼ cup mint
- 1 shallott
- Salt- a pinch
- Pepper- as desired
Method
- Chop up the pumpkin and finely slice the garlic.
- Add to a baking pan and toss with oil.
- Roast the pumpkin in 180 degree Celsius oven for 30minutes or until the pumpkin is cooked.
- Chop up the broccoli. Add to steamer. Boil the water and steam the broccoli for 5 minutes so it is cooked but still firm.
- Make the dressing. Chop up the mint and snallott
- Add the olive oil, lemon juice, salt, pepper, mint and shallot to a small bowl by adding the olive oil, lemon juice and mint,
- Allow the pumpkin and broccoli to cool to room temperature
- Assemble the rest of the salad ingredients in a bowl. Leaving the pomegranate, slithered almonds and dressing until last.
