Hello Bright Bod!
Keeping up those healthy eating habits and fitness levels is something most of us have to keep working on, including me.
However, this time of year, aruund the winter solstice, can often be a time where you may feel that it is time to change things up and focus on within. Working on other areas of your lifestyle such as getting more sleep or putting in place sleep routines, practising relaxation like deep breathing exercises, meditation or yoga or even implementing screen free boundaries can be just as beneficial.
As the days start getting lighter, gradually build back your focus on changing your eating habits or increasing your fitness levels towards your goals.

Recipe of the Month
Pecan, Red Lentil and Pumpkin Seed Soup
Serves 8
Ingredients
- 2 cups red lentils
- 1 carrot
- 1 stalk celery
- 1 butternut pumpkin or Kent Pumpkin
- 1 onion
- 2 cloves of garlic
- 2 Tb olive oil
- 2L boiled water
- pinch of salt
- 1 Tb paprika
- pepper for taste
- 200g pecans and extra for garnish
Method
- Fill the kettle with water and boil.
- Chop up all the ingredients. For the Kent pumpkin you do not need to remove the skin and ensure to add the pumpkin seeds to the pot, do not discard the seeds.
- Put a large pot on the stove on medium heat and saute the onion and garlic in a little oil.
- Add the vegetables, lentils, pecans, boiled water, pepper and paprika.
- Boil on medium heat until the carrot is soft, approximately 20-30 minutes.
- Add salt to taste.
- Blend using a good quality stick blender or blender
- Serve with a spinkling of pecans.
