Hello Bright Bod!
Do you feel the cooler weather makes it harder to opt for those healthy foods even though you know it is good for you?
Sometimes doing something for yourself can not be as motivating as doing it for others. Many people choose healthy foods to ensure the people around them eat healthy: the kids, parents, housemates, work colleagues.
But even more so these days people are making food choices based on their eco-fiendly conscious. Opting, for wholesome nutritious foods over processed foods (like fruit or nuts as a snack instead of a sweet biscuit) considering the energy and resources that when into the growing of all the ingredients, processing, packaging and waste products and the effect on our air, water/sea and the animals that live in it.
So the next time you want to choose those comfort foods, think of the people around you and how your food choices can influence them as well as the journey of your food and who may have put their love and energy into it.

Recipe of the Month
Pumpkin Risotto
Serves 6
Ingredients
- 1 cup alborio rice
- 1kg or a small butternut pumpkin chopped into 1.5cm cubes
- 1 leek
- 2 cloves of garlic
- 4 cups mushrooms
- 1 zucchini
- 1 choko, peeled and cut up into 1cm cubes
- 1 stalk of celery- finely diced
- Herbs of your choice such as parsley and rosemary
- 500g chicken or firm tofu
- 2 Tb olive oil
- pinch of salt
Method
- Fill the kettle with water and boil.
- Chop up all the ingredients.
- Put a large pot on the stove on medium heat and saute the leek and garlic in a little oil.
- Add the rice, pumpkin, celery, choko, herbs and about 1 cup of boiling water.
- Stir as the rice absorbs the water.
- When the water has absorbed, add another cup and continue stiring.
- Add the mushrooms, zucchini and another cup of water. Continuing to stir whilst the rice absorbs the water.
- When the pumpkin is soft, mash the pumpkin against the side of the pot with a spoon.
- Add the chicken or tofu and continue adding another cup of water and stiring until the rice is cooked.
- Season with salt, pepper and extra herbs as desired.
