Clever Eating
One of Bright Diet's goals is to help as many people as possible be clever about their eating. To make healthy food choices, easy food choices and create a culture and attitude change in our community for this to be a normal and celebrated way of life.
Over the short time, almost 20 years, that I have been a Dietitian I have noticed more and more, that healthy eating is not common and now carries a stigma.
Multi-national food companies have spent gazillions of dollars over, at least, the last 50 years, researching ways to sell their products to us to increase consumption through advertising. The result is a highly skewed exposure of 'sometimes foods' in our home and community enviroment. From books, TV shows, movies, social media to advertising portraying 'sometimes foods' in far greater proportion and with much more positive emotion than the foods our body needs which actually make us feel good and function optimally.
There is no reason why fresh nutritious foods can't make us feel excited about eating them, it just depends on who you are getting your emotional food information from, and where they got it from, and so on and so forth.
This is the reason we give out a packet of seeds to our clients to start their nutritious food loving journey and why I am part of the Central Coast Edible Garden Trail this year. To help people learn to fall in love with their fresh, nutritious, locally grown food. Increase food availability, community connection and place a higher value on the foods we eat.

Recipe of the Month
Dino Pasta with Nomato Sauce
This one is for those food sensitive families with fussy eaters, especially when you run out of time.
Make the sauce in advance and place in jars in the fridge for 2-3 days or freeze.
Serves 4-8
Ingredients
- 1 cup beetroot, peeled
- 1 small butternut pumpkin/sweet potato, peeled
- 2 large zucchinis or chokos, peeled
- 1 leek or 3 shallots
- 2 cloves garlic
- 2 sprigs of parsley
- 1 pear, peeled.
- 1 tsp citric acid
- 1 tsp salt
- Pasta
- Cheese
Method
1. Chop vegetables and boil with enough water to cover
2. Use a soup spoon to add vegetables to blender leaving some water in the pot in order to adjust the consistency after blending if needed.
3. Add citric acid and salt to taste.
4. Blend, reserving some pot water to ensure it is not too runny and in the case of needing to make the sauce thinner. I make a reasonably thick sauce.
4. Use a funnel to pour the sauce into jars. If freezing ensure the jar is filled with a 2cm gap from the top. Place in fridge or freezer when cooked or use straight away.
5. Cook pasta as per packet instructions- I use the microwave.
6. Drain the pasta, serve into a bowl and pour sauce over pasta.
7. Top with cheese or serve with meat/chicken from the family dinner.
Add it: The Nomato Sauce can be used in place of tomato sauce in pastas, casseroles, on meats as marinades or after cooking, with navy beans, on pizza or use it to dilute a tomato based meal 50:50. For BBQ sauce add some Parisian essence to colour it brown.
